Magpie Recipe: Crab bites with curried mayo dip

Here is this week’s recipe from the Magpie Cafe.

Ingredients – serves 4

300g crab meat, equal quantities of brown and white

200g mashed potato

100g cream cheese

1-2 red chillies chopped

1 teaspoon finely chopped Coriander

Half teaspoon chive finely chopped

4 tablespoons Mayonnaise

2 banana shallots very finely diced

1 good teaspoon of medium curry paste

1 dessert spoonful of chopped coriander

For the coating: Panko breadcrumbs, salt and pepper, thin flour and water batter, oil for deep frying.

Method

Pour a couple of drops of oil into a small pan and add the diced shallot, cook over a low heat, stirring occasionally until softened. Add the curry paste and allow to gently

cook to release the flavours, remove from the heat and cool slightly before adding it to the mayonnaise.

Mix well, cover and chill. For the crab bites simply mix the potato, crab meat, cream cheese and the teaspoon of coriander, mix the ingredients until well combined and season with salt and pepper, taste and adjust if needed.

Divide the crab mix into 12 equal balls. Roll each ball through the thin batter then roll them through the panko breadcrumbs.

Pre-heat the oil to 170°C and carefully lower in the crab bites, fry until golden in colour. Once ready remove them from the oil onto kitchen paper then sit them onto washed spinach leaves and serve with the curried mayonnaise.
